PROBLEM TO BE SOLVED: To provide a method for producing a salted and dried product with high preservability without using common salt.SOLUTION: The method for producing the salted and dried product made by using an additive excluding common salt includes a pretreatment process S101 of pretreating a raw material G, and a first additive treating process S102 of treating the raw material G after the pretreatment process S101 by a specific additive. The specific additive is potassium chloride and citrate, and a treatment of soaking the raw material G after the pretreatment process S101 in an aqueous solution made by using the potassium chloride and the citrate is performed in the first additive treating process S102.
