A garlic fermentation device and a fermentation method thereof are disclosed. The garlic fermentation device comprises a main body, a water tank having a water-supply pipeline, a heater and a control device. The main body internally comprises a heating chamber and a fermentation chamber that is communicated with the heating chamber and utilized for placing garlic, in which the heating chamber is full with a hot gas when the heater is operated, a liquid received in the water tank is vaporized to produce a water vapor, and the hot gas and the water vapor flow to the fermentation chamber. The control device comprises a controller, a water level sensor and a temperature sensor, in which sensing signals from the water level sensor and the temperature sensor are transmitted to the controller. According to the sensing signal from the water level sensor, the water-supply pipeline controlled by the controller is utilized to replenish liquid to the water tank. Besides, according to the sensing signal, a predetermined temperature and a predetermined heating time of the temperature sensor, the heater controlled by the controller is utilized to keep the fermentation chamber at a predetermined range of temperature and also to allow the garlic in the fermentation chamber to be fermented at a suitable fermentation temperature and humidity.
