PROBLEM TO BE SOLVED: To provide a method which, when obtaining water extraction coffee by a method belonging to impregnation methods, enables rapid and efficient extraction of soluble components from coffee powder by stirring water and the coffee powder evenly and uniformly.SOLUTION: Water extraction coffee is obtained by: accommodating coffee powder obtained by pulverizing roasted coffee beans and water in an extraction container 11 obtaining a coffee extract by stirring the coffee powder and water under action of centrifugal force through revolution of the extraction container 11 around the vertical revolution axis L1 and autorotation thereof around the autorotation axis L2 which passes through the center of the extraction container 11 and thereafter filtering the coffee extract through a filter.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2017,JPO&INPIT【課題】冷浸式に属する方法で水出しコーヒーを得る場合に、水とコーヒー粉末とをむらなく均等に攪拌することにより、前記コーヒー粉末から可溶成分を短時間で迅速且つ効率良く抽出することができる方法の提供。【解決手段】焙煎したコーヒー豆を粉砕して得られたコーヒー粉末と水とを抽出容器11内に収容し、抽出容器11を、鉛直な公転軸線L1を中心にして公転させると共に、抽出容器11の中心を通る自転軸線L2を中心にして自転させることにより、前記コーヒー粉末と水とを遠心力の作用下で攪拌してコーヒー抽出液を得たあと、前記コーヒー抽出液をフィルターで濾過して水出しコーヒーを得る。【選択図】図1
