The present invention relates to a method for manufacturing a food material using grub with removed heavy metal, and a food material manufactured thereby. The grub has a problem that an amount of lead, arsenic and cadmium, corresponding to the heavy metal, exceeds a standard notified by Ministry of Food and Drug Safety because of making an extract through hot wind drying or hot water leaching while the grub contains excretion in internal organs. To solve the problem, the present invention includes the steps of: collecting the grub in a cocoon by breaking the cocoon forcefully at the time 7-8 days are spent after a third instar of the grub and the grub starts to make cocoon by using inhabitants and excretion of the grub； and performing cleansing and drying processes to be used as the food material or a food additive, thereby using the grub which conforms to the standard for the content rate of the lead, the arsenic and cadmium in a food notified by the Ministry of Food and Drug Safety such that the grub is usable as the food material or the food additive.COPYRIGHT KIPO 2018중금속 독소를 제거한 굼벵이를 이용한 식품 재료 제조방법과 이에 의하여 제조한 식품 재료에 관한 것으로, 굼벵이의 경우에는 내장에 배설물이 포함된 상태로 열풍건조 또는 열수 침출하여 추출물을 만들기 때문에 중금속에 해당하는 납, 비소, 카드늄이 식약청에서 고시한 기준을 초과하는 문제점이 그대로 내포되어 있다.본 발명은 이러한 문제점을 해결하기 위하여, 굼벵이가 3령이 된 다음 서식지의 서식물과 자기의 배설물을 이용하여 코쿤을 만들기 시작하여 7∼8일이 되는 시점에서 강제로 코쿤을 깨트려서 코쿤 내부에 들어있는 굼벵이를 수거하여 세척, 건조과정을 통하여 식품의 재료나 식품 첨가물로 사용하게 하여 식약청에서 고시하고 있는 식품에 대한 납, 비소 및 카드늄 함유율이 기준에 적합한 굼벵이를 사용하여 식품의 재료로 또는 첨가물로 사용 가능하게 한 효과가 있다.
