PROBLEM TO BE SOLVED: To provide a production method of a sugar composition that can safely and industrially mass-produce, from sucrose, inhibitors inhibiting invertase that is an enzyme hydrolyzing sucrose, and to provide an invertase inhibitor.SOLUTION: A sugar composition can be obtained by reacting sucrose with a high molecular weight fraction component obtained from the sap of Aceraceae Acer trees. An invertase inhibitor is obtained by the reaction of sucrose with the high molecular weight fraction component obtained from the sap of Aceraceae Acer trees, the invertase inhibitor containing at least oligosaccharide. The Aceraceae Acer trees are at least one kind selected from Acer saccharum, Acer pictum, Acer nigrum, Acer rubrum, Acer saccharinum, Acer pensylvanicum, Acer spicatum, and Acer platanoides.
