A process for producing a plant protein ingredient and the plantprotein ingredient is disclosed. The process may comprisecomminuting the plant material into particles, thereby obtainingcomminuted plant material； separating the particles of thecomminuted plant material into a finer fraction and a coarserfraction； washing the finer fraction with an aqueous alcoholsolution for reducing the solubility of proteins contained in thefiner fraction, thereby obtaining a washed finer fraction；enzymatically treating the washed finer fraction to remove at leasta part of the phytate and/or cell wall components to obtain anenzymatically treated finer fraction, and optionally removing atleast a part of water soluble components from the enzymaticallytreated finer fraction, thereby obtaining the plant proteiningredient； and drying the plant protein ingredient to a moisturecontent of at most 45 % (w/w ).
