The present invention relates to a method for producing fermented milk using a strain of Lactobacillus plantarum JA71 having excellent folic acid productivity, and to fermented milk produced by the same method. The fermented milk, produced by using the strain of the present invention in a certain fermentation condition set by a central composite design, contains a large amount of folic acid and has excellent functionalities like taste, flavor, texture, comprehensive preference, and purchase intention.본 발명은 엽산(folic acid) 생성능이 우수한 락토바실러스 플란타룸(Lactobacillus plantarum ) JA71 균주를 이용한 발효유의 제조방법 및 상기 방법에 의해 제조된 발효유에 관한 것이다. 본 발명의 균주 및 중심 합성 계획법(central composite design)에 의해 확립된 특정 발효 조건에 의해 제조된 발효유는 엽산을 다량 함유함과 아울러 우수한 관능성(맛, 향, 조직감, 종합적 기호도 및 구입의사)을 가진다.
