The present invention relates to an aloe vera gel filleting machine (A) and a method for filleting. The machine (A) consists of a frame (2) which supports all components of the machine, a leaf holding channel (14) for holding the leaf, a feeding channel (15) for feeding the leaf through feeding guides (16). A pressure adjusting spring (11) is provided for engaging the pinion set (18) continuously during lifting of upper roller (13a) as per the thickness of the leaf. The machine is equipped with an upper rind (3), lower rind (5) and fillet collection trough (4) for collecting upper rind, lower rind and gel fillet. A plurality of pressure adjusting springs (11a) are provided for moving the upper roller (13a) up and down as per thickness of leaves while an upper (12a) and a lower (12b) rind filleting blades are provided for the separation of three layers of the leaves simultaneously producing the upper rind, gel fillet and lower rind.
