Disclosed are a food property analysis tooth model provided with a sample shielding unit and a masticatory movement simulator using the same. According to the present invention, the food property analysis tooth model provided with the sample shielding unit comprises: an upper jaw model including an upper jaw gum frame provided at a front end part thereof with upper jaw teeth corresponding to upper teeth of a human； a lower jaw model arranged under the upper jaw model to perform masticatory movement with respect to the upper jaw model and including a lower jaw gum frame provided at a front end part thereof with lower jaw teeth corresponding to lower teeth of a human； and the sample shielding unit provided at a mastication space between the upper jaw model and the lower jaw model to prevent an inputted food sample from being separated to the outside during the masticatory movement of the upper jaw model and the lower jaw model and performing continuous mastication of the food sample. The present invention arranges the sample shielding unit, formed in various shapes for not disturbing the masticatory movement of the upper jaw model and the lower jaw model, to surround the mastication space between the upper jaw model and the lower jaw model, thereby being capable of performing the continuous mastication through the upper jaw teeth and the lower jaw teeth while preventing the food sample, inputted into the mastication space, from being separated to the outside and enabling a user to observe shape changes of the food sample and deformation of cut surfaces during the mastication process from the outside.
