PURPOSE: A hot pepper drier of a low temperature cold air dehumidifying type is provided to produce dry peppers of high quality while maintaining color, spiciness, and nutrient of the hot peppers. CONSTITUTION: A hot pepper drier of a low temperature cold air dehumidifying type prevents heat loss in a drying room by installing an electric-heat exchange type of a recuperator(20) between an evaporator(16) and a condenser(12) to allow air ejected from a drying room(2) to be ejected to the outside after passing through the recuperator, and at the same time allowing air entering from the outside to exchange heat by the recuperator to be heated up and then entered into the drying room through the condenser. The air in the drying room which passed through the recuperator is ejected through a wet blower(22) that is installed in an exhaust channel, and the air entering from the outside is heated up by passing through the recuperator, and then entered into the drying room through a blower(24). The recuperator is formed of a thermally conductive metal material such as aluminum, and includes metal corrugated materials between metal plane plates. The metal corrugated materials having valleys where heat is exchanged are alternately arranged in the recuperator.
