Herein is described the quorum quenching activity of compounds of formula (I) or (II) such as hydroxytyrosol (HT), hydroxytyrosol acetate (HTA), 3,4-dihydroxyphenylacetic acid (DOPAC) and derivatives thereof. It is also described their use in the treatment of bacterial infections or a disorder associated with biofilm formation in a subject, associated with quorum sensing caused by pathogenic bacteria as well as their use in the manufacturing of food, foodpakage, medical devices and pharmaceutical compositions.Linvention concerne lactivité de désactivation de quorum des composés de formule (I) ou (II) tels que lhydroxytyrosol (HT), lacétate dhydroxytyrosol (HTA), lacide 3,4-dihydroxyphénylacétique (DOPAC) et leurs dérivés. Linvention concerne également leur utilisation dans le traitement dinfections bactériennes ou dun trouble associé à la formation de biofilm chez un sujet, en association avec la détection de quorum provoquée par des bactéries pathogènes, ainsi que leur utilisation dans la transformation des aliments, la fabrication demballages de produits alimentaires, de dispositifs médicaux et de compositions pharmaceutiques.
