PROBLEM TO BE SOLVED: To provide a method of manufacturing sphingolipids from the shochu lees.SOLUTION: The method of manufacturing sphingolipids includes a process of extracting a sphingolipid from the shochu lees generated in manufacturing shochu using cereals such as rice, barley or the like as a raw material and the shochu malt. The shochu malt to be used includes Aspergillus kawachi, Aspergillus saitoi, Aspergillus awamori, Aspergillus nakazaki, Aspergillus usami, Aspergillus luchensis, Aspergillus niger or the like, or a microorganism belonging to the Rhizopus group, a microorganism belonging to the Monuscus group, a microorganism belonging to the Penicillium group, and the like.
