To provide a vegetables and fruits storage device and a vegetables and fruits storage method, capable of retaining freshness of vegetables and fruits for a long term, in storing the vegetables and fruits under a low-temperature environment in accordance with the CA method.SOLUTION: A storage device 1 is configured to adjust oxygen concentration and carbon dioxide concentration in a refrigerator, to store vegetables and fruits. The storage device includes: humidity adjustment means 100 of adjusting humidity of air in the refrigerator, temperature adjustment means of adjusting a temperature of the air in the refrigerator, gas concentration adjustment means 300 of adjusting the oxygen concentration and carbon dioxide concentration of the air in the refrigerator, and control means 400 of controlling the whole operation of the storage device.
