The present invention relates to a method for producing dried ginseng, comprising: an alternating-temperature alternating-humidity drying step of periodically controlling the temperature and the humidity and a compression molding step. The purpose of the present invention is to solve a problem in that the shape of ginseng may be crooked or distorted after a drying process of the ginseng as well as problems in that the formation of inner pores and a loose ginseng texture may be generated during the drying process of ginseng. Accordingly, the present invention relates to a method for producing dried ginseng, in which the ginseng texture is made dense and the inner holes are not formed by including the alternating-temperature alternating-humidity drying step of periodically controlling the temperature and the humidity, and the shape of the ginseng is molded through the compression molding step when the ginseng is dried to have a crooked or distorted shape during the drying process. Particularly, the present invention relates to a method for producing dried ginseng, in which, at the time of compression molding step, the moistening time is controlled depending on the weight (g) of the dried ginseng, thereby providing the optimum moisture content to the dried ginseng. The method for producing dried ginseng of the present invention, comprising the compression molding step, can prevent the squishing of the ginseng or the color changing of an outer surface of the ginseng, which may occur while the crooked or distorted ginseng is molded, thereby producing high-quality products.
