Disclosed is a dehydrated food product of homogeneous composition in the form of flakes, which flakes have a porosity of 30% to 70%, wherein the dehydrated food product has a total moisture content of less than 5% by weight, wherein the homogeneous composition has evenly dispersed ingredients, and where the flakes have a bulk density of about 100 g/L to about 300 g/L. Also disclosed is a process for the manufacture of such a product by extruding a thermoplastic material through an extrusion die to form an extrudate strand and cutting the strand into pieces to form the flakes.
