An apparatus and method are disclosed for microwave vacuum drying of organic materials such as foodstuffs. The dewatering device 20 has a vacuum chamber 24 having an input module 28 at one end and a discharge module 32 at the other end. The vacuum chamber has access doors 80 spaced apart between the input end and the discharge end to provide operational and maintenance access. Microwave generators 86 are mounted on each access door and are arranged to irradiate into the vacuum chamber through the microwave chamber and the microwave-transparent window on the access door.
