An apparatus 2 for peeling tubers comprises an illumination device 20, camera 22 and lens 24 for detecting electromagnetic radiation, a sampler 28 for sequentially measuring electromagnetic radiation, a comparator 32 for comparing the rate of change of measured intensity values, and a controller 34 for controlling the peeler device 4 in response to the rate of chance of measured intensities. Also disclosed is a method of peeling tubers by sequentially measuring electromagnetic radiation using an illumination device, camera and lens, and operating the peeler device based on the intensity values. The apparatus and method are intended to maximise the amount of peel removed from the tuber and minimising the amount of flesh lost as waste. Additionally disclosed is a device (36, figure 2) for sorting tubers comprising a plurality of sorting zones (38, 40, 42, figure 2) serially arranged along a conveying direction from a tuber supply end (44, figure 2) and a method of sorting tubers comprising providing a tuber sorting device comprising (i) providing a plurality of sorting zones serially arranged along a conveying direction from a tuber supply end and (ii) supplying tubers from a tuber supply end.
