PROBLEM TO BE SOLVED: To provide a manufacturing method of a spring roll excellent in formability with a high producibility, having an excellent texture even when stored after frying.SOLUTION: The manufacturing method of a spring roll includes the steps of: forming a spring roll by wrapping an ingredient with a spring roll skin drying the spring roll such that the spring roll skin has a water content of 28 mass% or less and frying the dried spring roll. Between the drying step and the frying step, the step of freezing the spring roll dried in the drying step may be included. The drying step is performed by, for example, blowing hot air to the spring roll. The drying time of the spring roll by the blowing of hot air is preferably 60 minutes or less.
