PROBLEM TO BE SOLVED: To provide a method for producing a smoked food in which an aroma is less likely to be reduced and disappeared when the food is heated.SOLUTION: A method for producing a smoked food includes the steps of: (a) generating smoke by decomposing a plant raw material by heat in a carbonization vessel; (b) heating the smoke; and (c) making the smoke or the active ingredient after heating come into contact with or adhere to a raw food product material, continues thermal decomposition until a carbon dioxide concentration in the carbonization vessel is reduced to 35 to 58%, and reduces a heating temperature of the smoke by 5 to 35°C per the reduction in the carbon dioxide concentration of 1% after a ratio of a carbon monoxide concentration to the carbon dioxide concentration (CO/CO) in the carbonization vessel exceeds 0.4.SELECTED DRAWING: None
