In the method for concentrating plant proteins from an aqueous liquid, gas bubbles are generated in the liquid from a gas containing a hydrogen gas and a foam is thereby formed in which plant proteins are concentrated and extracted as a result. The gas bubbles are generated electrochemically in an advantageous manner. The method is particularly suitable for obtaining native proteins from a liquid such as potato fruit water with a very low glycol alkaloid content.
