The system comprises: a first pipe for conveying the protein, which passes through a pump at the entrance of the system; a thermal sector; a mechanical sector; and a chemical sector disposed after the pump, which comprises a PH corrector dispenser connected to the first pipe. In the method, the chemical treatment for correcting pH is performed at a pH of between 4 and 7.
