[Solution] Freeze-dried shrimp, after cooking by pouring hot water thereon, said freeze-dried shrimp having a larger size than conventional products and showing a springy and elastic texture, can be obtained by a method which comprises heating a starting shrimp material by soaking in water at 65-75oC until the internal temperature of the shrimp reaches 60-70oC, freezing the shrimp and then freeze-drying the same, compared with a conventional boiling method for producing freeze-dried shrimp which comprises heating shrimps in boiling water.[Problema a resolver] Un objeto de la presente invención es proporcionar un método para producir camarón secado por congelación que, después de cocinarlo mediante vertido de agua caliente, presentan un tamaño aparente mayor que los convencionales y presentan una textura regordeta, elástica. [Solución] El camarón de materia prima se calienta sumergiéndolo en agua caliente de 65 a 75°C hasta que el camarón tiene una temperatura interna de 60 a 70°C y después el camarón se congela y posteriormente se seca por congelación. Con este método es posible obtener camarón secado por congelación que presenta un tamaño aparente más grande y una textura regordeta, elástica después de la cocción por vertido de agua caliente, en comparación con los convencionales obtenidos por métodos convencionales para producir camarones secados por congelación con el empleo de calentamiento por ebullición en agua hirviendo.
