PURPOSE: A quality improvement method of processed marine products is provided to secure distribution stability and quality improvement by sterilizing a contaminated microorganism which is still existed in the processed marine products with an electronic beam.CONSTITUTION: An electronic beam is irradiated in the processed marine products and a contaminated microorganism which is still existed in the processed marine products is sterilized with extinction. In the electronic beam irradiation step, the electronic beam is consecutively irradiated to the processed marine products under the conditions of 2.5-10 MeV of the energy and 1-3 kGy of electron beam irradiation dose. An electron beam accelerator is set up on a transfer and supply line in which a transport mechanism which comprises a transfer cart or a conveyor is installed. The electronic beam which is generated from the electronic beam accelerator is irradiated in the processed marine products which are transferred and supplied through the transport mechanism. The processed marine products are contained inside the synthetic resin packing paper or packed with contained inside a corrugated board box.COPYRIGHT KIPO 2013[Reference numerals] (AA) Quality enhancement of processed marine product (BB) Energy: 2.5-10MeV irradiation: 1-3kGy (S1) Install an electronic beam accelerator on transfer supply line of a transfer device and the electronic beam is consecutively irradiated to the processed marine products (S2) Consecutively transfer and supply processed marine product through the transfer supply device (S3) Sterilize the processed marine product by irradiating beams from the an electronic beam accelerator본 발명은 수산가공품의 품질개선방법에 관한 것으로, 에너지 2.5~10 MeV와 전자빔 조사선량 1~3 kGy의 조건하에서 수산가공품에 전자빔을 연속 조사처리함으로써 수산가공품에 존재하는 오염미생물을 사멸 및 멸균시킬 수 있으며, 품질개선과 더불어 식품 안전성 그리고 품질 안정성을 확보할 수 있는 수산가공품의 품질개선방법에 관한 것이다.
