FLAVOR-ENRICHING AGENT AbstractThe present invention intends to search for most of variational compounds possessing the desired CaSR agonist activity and to thus find out a substance capable of imparting akokumi to a food, which shows a more excellent kokumi-imparting effect, in particular, a kokumi-imparting effect of the middle/after taste-imparting type one, which is excellent in the stability and which has a high titer and more specifically the present invention intends to provide a kokumi-imparting agent consisting of such a substance as well as a complex kokumi-imparting agent comprising the substance and other substances each possessing a CaSRagonist activity.The present invention thus provides a kolcumi-imparting agent consisting of Y -Glu-Nva-Gly (L- r -glutamyl-L-norvalyl-glycine), and a complex kokumi- imparting agent comprising the substance and another substance having a CaSR agonist activity, in combination.(No suitable figure)
