PROBLEM TO BE SOLVED: To provide a natural and safe additive made from rice, capable of improving physical properties of various foods.SOLUTION: To rice containing a high amylose rice and/or a medium amylose rice, water in more than 0.8 times the amount of the rice is added. The rice is then heat treated to produce a glue product, which is mechanically agitated to produce a rice gel. An agent for improving physical properties of foods and drinks includes the rice gel as an active ingredient. A method for improving physical properties of foods and drinks uses the agent for improving physical properties of foods and drinks.
