The process of the present invention provides a method of separation of endosperm free pericarp of fenugreek seeds, which is tightly bound with endosperm with uneven surface, by adapting a series of specific processing steps to prepare soluble and insoluble dietary fibre from such endosperm free pericarp. The separation of pericarp from endosperm is effected by allowing the seeds to equilibrate/soften with known quantity of water for a known period followed by grinding before added moisture comes in contact with endosperm. This facilitated to separate endosperm free pericarp . Pure pericarp is subjected to grinding of the pericarp fragments and defatting in column using hydrocarbon solvents, extracting of the above defatted pericarp powder with aqueous acetic acid having pH 5.0 to 1.0 for 2hr on a magnetic stirrer, filtering followed by alcohol washing and drying. Insoluble dietary fibre obtained from the dried column spent residue whereas soluble dietary fibre obtained from filtrate by precipitating using alcohol (1:3).
