Disclosed are methods of producing an antimicrobial solution, involvingdissolving nisin inhydrochloric acid and adding an ionic chelator solution to form a basesolution, heating the basesolution, adding sodium lactate to the base solution, followed by addingsorbic acid to the basesolution, heating the base solution, followed by adding hydrogen peroxide tothe base solution,followed by adding citric acid to the base solution, followed by heating thebase solution,followed by adjusting the pH of the base solution to about 5.0 ~ 0.2 with abase. Also disclosedare antimicrobial solutions and/or anti-browning solutions produced by themethods describedherein. Furthermore, there are disclosed methods for reducing bacteria onproduce and/orminimizing enzymatic browning of produce, involving contacting the producewith an effectivebacterial reducing amount and/or an effective enzymatic browning minimizingamount of theantimicrobial solution described herein.
