PROBLEM TO BE SOLVED: To provide tortiglioni that have organoleptic and structural characteristics, in particular a consistency or texture, superior to those of conventional tortiglioni which have ridges or ribs oriented in the manner of a helix with an angle of inclination of about 35°.SOLUTION: This invention provides a dried pasta in the form of a tortiglione, i.e. shaped as a hollow cylindrical tube or elliptic cylindrical tube, wherein the form of tortiglione has an outer diameter of between 8 and 14 mm and has on its outer surface a plurality of ridges or ribs oriented in the manner of a helix with an angle of inclination of between 40° to 58°.SELECTED DRAWING: Figure 3【課題】本発明は、約３５°の傾き角度でらせん状に配向されたリッジ部又はリブ部を有する従来のトルティリョーニよりも優れた感覚刺激特性及び構造特性を、特に、歯応え又はテクスチャを有するトルティリョーニを提供することを目的とする。【解決手段】トルティリョーニの形態、すなわち中空円筒管又は中空楕円筒管（hollow cylindrical tube）の形状である乾燥パスタを提供する。前記トルティリョーニの形態は、８ｍｍ～１４ｍｍの外径を有し且つ外面上に４０°～５８°の傾き角度でらせん状に配向された複数のリッジ部又はリブ部を有する形態である。【選択図】図３
