The present invention relates to a method for cultivating a sprout barley capable of maintaining effectiveness of an extraction process and safe cultivation of barley, and to a beverage using the sprout barley, wherein the method comprises the following steps: (a) performing an immersion process by immersing barley seeds in water, changing the water four times a day, and maintaining the temperature at 15 to 20°C for three days (b) planting the barley seeds immersed in the step (a) in a germination plate in a hydroponic cultivator, and germinating the barley seeds by maintaining the temperature in the hydroponic cultivator at 45 to 55°C and (c) spraying water by spraying water four times a day after germination in the step (b) to supply water, growing the barley seeds for 5 days at the temperature of 20°C in the hydroponic cultivator, and harvesting the barley seeds, thereby maintaining safe cultivation of raw materials and the effectiveness of the extraction process and increasing a yield rate.COPYRIGHT KIPO 2017보리의 안전한 재배와 추출과정의 유효성을 유지할 수 있는 새싹 보리의 재배 방법 및 이 새싹 보리를 이용한 음료에 관한 것으로, (a) 보리 씨앗을 물에 담가 1일 4회 물을 교환해주며 3일간 온도 15~20℃를 유지하여 불림 과정을 실행하는 단계, (b) 상기 단계 (a)에서 불린 보리 씨앗을 수경 재배기 내의 발아판에 정식(定植) 하고, 수경 재배기 내의 온도를 45~55℃로 유지하여 발아시키는 단계, (c) 상기 단계 (b)에서 발아 후, 1일 4회 물을 안개 분무하여 수분을 공급하고, 수경 재배기 내의 온도를 20℃로 유지하며 5일간 새싹 보리를 성장시키고 나서 수확하는 단계를 포함하는 구성을 마련하여, 원료의 안전한 재배와 추출과정 유효성의 유지 및 수득률을 증대할 수 있다.
