PROBLEM TO BE SOLVED: To provide chilled noodles having shelf stability equivalent to that of "raw noodles" of the chilled noodles, which can be easily disentangled when cooked, allowing the noodle boiling water to be directly used for dilution of the soup; and a manufacturing method thereof.SOLUTION: The surface of raw noodles manufactured by a conventional method is subjected to drying treatment without using flour for a short time. Subsequently the raw noodles are sealed in a package so as to be subjected to vapor heat sterilization. Consequently, chilled noodles having shelf stability equivalent to that of "raw noodles" of the chilled noodles, which can be easily disentangled when cooked, allowing the noodle boiling water with less turbidity to be directly used for dilution of the soup, and a manufacturing method thereof can be provided.
