PROBLEM TO BE SOLVED: To provide a method and a device for simply retaining the freshness of post-harvest fruits and vegetables such as strawberries, tomatoes, broccoli, and grapes.SOLUTION: The invention includes a freshness retention method in which red light and far-infrared light are irradiated to fruits and vegetables simultaneously or alternately, and a freshness retention method in which the total light intensity of the red light and the far-infrared light is made to be at least 1.8 W/m2 even immediately below the light source, and the light intensity ratio of the far-infrared light to the red light is made to be a value in the range of 0.5-2.
