PROBLEM TO BE SOLVED: To provide a flour composition that has sufficient strength for a practical use and with which dough having excellent secondary processing quality can be prepared.SOLUTION: A flour composition of the present invention contains cereal flour and a free type ferulic acid. The content of the free type ferulic acid is 0.005-50 ppm with respect to the total amount of the cereal flour. More than 50 mass% of the cereal flour is suitably wheat flour. The free type ferulic acid is a derivation of refined ferulic acid containing 50 mass% or more of the free type ferulic acid. The refined ferulic acid is suitably from a refined ferulic acid containing composition derived from plants or chemical synthetic products. The flour composition of the present invention further may contain at least one kind of additive selected from a group consisting of starch and modified starch.
