In a process to control a confectionery assembly with a number of simultaneously operated production lines (16, 17) a common starting base mass of food ingredients is sub-divided into fractions. Selected different ingredients (23) are then admixed to each fraction, producing batches (19) of different size and flavour for subsequent parallel processing. The consumption of ingredients held at readiness is monitored during the preparation and mixing stages and replenished at the necessary different intervals. The rates and intervals at which the ingredients are replenished is such that all the ingredients become exhausted at the same time, with the products mixed in the correct ratio. Further claimed is an embodiment in which the ingredients are varied during the course of the production process to prepare different types of product. Also claimed is a commensurate mixture regulation assembly for the preparation of confectionery products.
