The present invention relates to a novel method for manufacturing royal jelly powder, characterized in using a novel high protein excipient mixed evenly with royal jelly, freezing and drying at ultra-low temperature to develop into a lyophilized powder for making lyophilized royal jelly powder containing novel high protein excipient, wherein the novel high protein excipient is prepared by fermenting fresh dairy with saccharomyces cerevisiae and extracting the fermented dairy protein extraction. Because of containing natural fermented dairy protein extraction, the lyophilized royal jelly powder provided by this invention can significantly improve the taste and increase nutritional value and quality stability. In addition, the lyophilized royal jelly powder provided by this invention has better appearance in power characteristics and lighter browning property, and has better protective effect for 57kDa active protein of royal jelly (royalactin) at room temperature, as a whole the invention is a high quality royal jelly product.本發明係關於一種蜂王乳粉、其賦形劑及其新穎製備方法。其特徵在於利用一新穎高蛋白賦形劑,與蜂王乳混勻後,進行超低溫冷凍乾燥以研製成凍晶粉末,即可製得一含有新穎高蛋白賦形劑之凍乾蜂王乳粉。其中該新穎高蛋白賦形劑係以生鮮乳品經酵母菌發酵,萃取製備出一發酵態乳品蛋白抽出物,即可作為一高蛋白賦形劑。本發明所提供之凍乾蜂王乳粉,由於含天然發酵態乳品蛋白抽出物,可顯著改善蜂王乳口感,並提昇其營養價質與品質穩定性。此外,本發明提供之凍晶蜂王乳粉末,外觀具有較佳的粉體性狀與較輕微褐變性,且對蜂王乳之57 kDa活性蛋白(royalactin)於常溫具有較佳的保護效果,堪稱是高品質的蜂王乳產品。
