PROBLEM TO BE SOLVED: To obtain an entirely new edible material of Crustacea capable of eating at any time or in any place without losing properties such as tough feeling, bland taste and flavor or high-class feeling of raw material itself, capable of directly eating it as confectionery or an accompaniment to a drink, utilizing it as salad, directly using to cooking at home or outdoor and utilizing as a material for smoked foods. SOLUTION: This method for producing processed food of Crustacea comprises passing through a heating step for applying heat until the center part 10 of a Crustacean body becomes white after drying the surface of the raw material. The processed edible food of Crustacea is produced by the above method.
