PURPOSE: An extraction method of collagen from shark skin and meat is provided to obtain acid-soluble collagen and pepsin-soluble collagen with excellent elastase and tyrosinase inhibitory activity. CONSTITUTION: An extraction method of collagen from shark skin and meat comprises the following steps: washing the shark meat, and adding sodium hydroxide for homogenizing for 5~30hours; stirring and filtering the homogenized shark meat, removing alkali soluble non-collagen protein, and washing the residual alkali with distilled water; applying a sodium hypochlorite solution to the shark meat for bleaching, and washing the obtained material with distilled water; and applying citric acid to stir-extract for 2~5days, and centrifugal separating.본 발명은 상어 콜라겐의 추출 방법에 관한 것으로, 상어의 껍질과 육 조직으로부터 산가용성 콜라겐과 펩신(pepsin) 가용성 콜라겐을 추출하는 방법을 제공하여, 항산화성, 항균성, tyrosinase 및 elastase 저해활성이 우수한 콜라겐을 제공하는 데 있다.
