We have introduced a novel processing method to process tender coconut water. This method does not use pasteurization, normally followed in other methods. Our method is a non-thermal process. Our establishment, M/s. Madhura Agro Process Ltd. (MAPL) is marketing processed tender coconut water packed in pre-sterilized plastic bottles of 250 ml capacity for more than four years. Storing more amount of tender coconut water in higher capacity pouches in a coolant chamber was thought of. Consequently, new device Chilled Tender Coconut Water Dispenser (CTCWD) which is the first of its kind in the world could be designed, fabricated and successfully commissioned. CTCWD is an integrated assembly of a low power refrigeration system to cool a cold chamber having the cold volume capacity of 22.5 litres. Refrigeration system ensures uniform temperature throughout the cold volume. 2 puff insulator in the cold chamber ensures in maintaining the set temperature constant for sufficiently long duration. The whole cold chamber is made from SS202. A stainless steel basket made from SS316 houses aluminium sheathed food grade polyethene pouch that can hold 250 ml of processed tender coconut water. SS basket can house two pouches. This is equivalent to 40 bottles of 250 ml capacity. Storing of 10 litres of processed tender coconut water is more useful to many beneficiaries from petty shop to hotels, canteens, religious functions such as marriage, conferences and so on Price of CTCWD is half that of conventional refrigerators.
