PROBLEM TO BE SOLVED: To provide a method for producing enzyme-treated black vinegar, in which foaming during stirring is controlled and generated foam tends to disappear, and applications of enzyme-treated black vinegar obtained by the production method.
SOLUTION: In the method for producing black vinegar which uses barley and/or rice as raw material, the method for producing enzyme-treated black vinegar includes carrying out a protease treatment after carrying out acetic acid fermentation.
