PROBLEM TO BE SOLVED: To provide a method of producing red algae lactic acid fermentation liquid in which a specific lactic acid bacterium having good compatibility with the red algae is used and which can be fermented without requiring an enzymatic degradation treatment step to exhibit an activity useful in the maintenance/promotion of health.SOLUTION: The method of producing algae lactic acid fermentation liquid includes: a mixing process of making a powder water solution where red algae powder, made by pulverizing red algae, is introduced into water a high pressure heat sterilization process of heating the powder water solution to 120°C while stirring a cooling process of cooling the powder water solution to a temperature of 39°C or less while stirring a fermentation bacteria introduction process of introducing Lactobacillus into the powder water solution while stirring at a time when the temperature of the liquid becomes 37±1°C and a fermentation stabilization process of stabilizing fermentation by making the pH of the powder water solution into which fermentation bacteria were introduced 4.0 to 4.6 while stirring.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2018,JPO&INPIT【課題】紅藻類と相性のよい特定の乳酸菌を用いて酵素分解処理工程を経させることなく健康の維持・増進に有用な活性を示すように発酵させることができる紅藻類乳酸発酵液の製造方法の提供。【解決手段】紅藻類を微粉体化してなる紅藻パウダーを水に投入してパウダー水溶液とする混ぜ合わせ処理と、撹拌しながら前記パウダー水溶液の液温を120℃にする高圧加熱殺菌処理と、撹拌しながら前記パウダー水溶液の液温が39℃以下になるまで冷却する冷却処理と、液温が37.±1℃となった時点で撹拌しながら前記パウダー水溶液中に乳酸桿菌を投入する発酵菌投入処理と、発酵菌入りの前記パウダー水溶液のPHが4.0~4.6となるように撹拌しながら発酵を安定化させる発酵安定化処理とを経て藻類乳酸発酵液を製造する。【選択図】図1
