FIELD: food industry.SUBSTANCE: invention relates to manufacture of confectionary goods with a figured ornament or with monochromatic or polychromatic relief image on one of the goods surfaces. The main feature of the present invention is as follows: prepared chocolate or chocolate-like mass in a dispersed drop condition is supplied into the full-size mould through a nozzle at a dropping rate ensuring drops plastic deformation during their deceleration. This allows to accurately regulate the quantity of the confectionary mass supplied into the mould by way of controlling pressure difference within the nozzle and the time of the chocolate mass supplying through the nozzle. Thus, there is no need for preliminary measurement of the confectionary mass portion for the decorative relief element moulding. During drop supplying through the nozzle the chocolate mass is uniformly applied onto the mould surface in sufficiently small sized separate drops which promotes timely air removal from the relief pattern grooves on the mould surface thus the quality of the decorative relief element and of the confectionary goods in general is enhanced. During the mass uniform application one may form a very thin layer of the decorative relief element comparable to print in terms of thickness.EFFECT: invention ensures enhancement of the quality of confectionary goods with three dimensional relief decorative image.54 cl, 3 dwg, 2 ex
