The present invention provides aSaccharomycescerevisiaeadapted to be cultured in deep sea water. Differing from the conventionalSaccharomycescerevisiaemerely able to grow in pH 4.5-5.0 environments, the present invention provides aSaccharomycescerevisiaemutant capable of grow in pH 2.0-3.0 environments. Moreover, a variety of experiment data prove that deep sea water (DSW) is helpful to the growth of theSaccharomycescerevisiaemutant. So that, it is possible that using theSaccharomycescerevisiaemutant and DSW to brew wine can shorten the total days of wine brewing process.
