The present invention provides aSaccharomycescerevisiaeadapted to be cultured in deep sea water. Differing from the conventionalSaccharomycescerevisiaemerely able to grow in pH 4.5-5.0 environments, the present invention provides aSaccharomycescerevisiaemutant capable of grow in pH 2.0-3.0 environments. Moreover, a variety of experiment data prove that deep sea water (DSW) is helpful to the growth of theSaccharomycescerevisiaemutant. So that, it is possible that using theSaccharomycescerevisiaemutant and DSW to brew wine can shorten the total days of wine brewing process. Moreover, because thisSaccharomycescerevisiaemutant is able to grow steadily and rapidly in pH2-YPD plate including high-concentration DSW, such characteristic can be used for shorten the total time of bread fermentation process.本發明係提供一種適合培養於深層海水之釀酒酵母菌。不同於習知的酵母菌適合在pH4.5-5.0的環境中生長,本發明所提出的釀酒酵母菌突變株係能夠於pH2.0-3.0的環境中穩定生長。更進一步地,實驗結果同時顯示深層海水係有助於本發明之釀酒酵母菌突變株的穩定生長,或許,同時使用深層海水與釀酒酵母菌突變株進行釀酒,能夠有助於縮短釀酒製程之天數。此外,利用此釀酒酵母菌突變株SCI快速生長發酵之特性,亦能夠有助於縮短麵包發酵之製程。無
