The present invention relates to a manufacturing method of standardized fermented Alaska pollack with high quality using a response surface methodology. More specifically, it is verified that fermented Alaska pollack manufactured by the manufacturing method exhibits excellent properties in a sensory evaluation such as color, taste, flavor, texture, etc. in comparison with a commercial fermented Alaska pollack product manufactured by an existing recipe. Accordingly, provided is a manufacturing process of fermented Alaska pollack, which can manufacture standardized fermented Alaska pollack with high quality.
