PROBLEM TO BE SOLVED: To provide a hard candy which maintains a glass state in an ordinary temperature and makes components which it contains eluted into the mouth in a short time period, when it is put into the mouth, to be excellent in solubility in the mouth.SOLUTION: A hard candy maintains a glass state at an ordinary temperature, and changes from the glass state to a rubber state through a glass transition temperature when it is put into the mouth, and then changes to a liquid state through a melting temperature. In addition, the glass transition temperature is at least 30°C and at most 36°C, and its dissolution time measured by the following method is 17 minutes or shorter. The problem is solved by the hard candy which is excellent in solubility in the mouth. The measuring method: dissolution time (minutes) 200 ml of water (35-36°C) is put into a beaker of 300 ml in capacity, and a piece of the hard candy of 3.5 g per piece which is molded into a shape shown in Fig.3 and a stirring bar are put in together and stirred, by a graduation line 1, with a magnetic stirrer, and time required for completely dissolving the hard candy is checked through observation.COPYRIGHT: (C)2013,JPO&INPIT【課題】常温でガラス状態を維持するが、口中に入れると短時間で含有される成分が口中に溶出し、口溶け性に優れているハードキャンディおよびその製法の提供。【解決手段】常温でガラス状態を維持し、口中に入れるとガラス状態からガラス転移温度を経てラバー状態になり、次いで溶融温度を経て液状態となるハードキャンディであって、前記ガラス転移温度が30℃以上36℃以下であるとともに、下記の方法で測定した溶解時間が17分以下であることを特徴とする口溶け性に優れたハードキャンディにより、課題を解決できる。測定方法:溶解時間(分)300ml容のビーカーに200mlの水(35~36℃)を入れ、次いで図3に示す形状に成形した1個3.5gのハードキャンディおよび撹拌子を入れて、マグネチックスターラー(ヤマト科学株式会社製M-21)にて目盛1で撹拌し、前記ハードキャンディが完全溶解するのに要した時間を目視にて確認する。【選択図】図1
