A method of harvesting bay salt through several precipitating, evaporating and storing procedures is provided to obtain high quality bay salt with low salinity and high content of mineral. A method of harvesting bay salt comprises the steps of: precipitating sea water pollutants in a first step； pumping the precipitated sea water to a first evaporating pond with passing through a 12-stage evaporating pond along No. 1-5 sea water tank and storing sea water with a salinity of 12% in a No.5 sea water tank to precipitate an insoluble fraction in the second step； pumping the sea water in the No.5 to No.4,3,2,1 sea water tank with passing through a 12-stage evaporating pond and storing sea water with a salinity of 22 to 25% in a No.6,7,8,9 sea water tank； washing a crystallizing pond with water； conveying concentrated brine in the No. 6,7,8,9 sea water tank to the crystallizing pond； and harvesting bay salt crystallized by solar heat or a wind for 9hr from 7 a.m. to 4 p.m.본 발명은 염도는 낮고 미네랄 성분 함량이 높으며 인체에 유효한 식물 성분을 함유하면서 인체에 유해한 중금속 이물 불용 분은 최소화 하여 식재료의 원료염 으로써 적합한 천일염을을 제조 생산하는 천일염 채염방법 및 그것을 이용한 기호성 천일염 제조방법으로, 바다물이 고수위 시 방조제의 수문을 열어 저수지에 바닷물을 저장하여서 1차로 바닷물의 오염물을 침전시키는 제1 침전 단계(S1)； 상기 침전된 바닷물을 1차 증발지에 양수하여 1내지5번 해주를 따라 12단계의 증발지를 거치면서 침전과 증발의 공정에 의해 12도 염도로 맞춰진 바닷물을 5번 해주에 저장해서 불용분을 침전하는 제2 침전 단계(S2)； 상기 5번 해주에 저장된 바닷물을 다시 4번, 3번, 2번, 1번 해주까지 양수 이송시켜 12도 염도로 맞춰진 바닷물을 다시 한 번 12단계의 침전과 증발의 공정에 의해 22~25도의 염도로 맞춰진 농축된 소금물을 만들어 6번, 7번, 8번, 9번 해주에 저장하는 단계(S3)； 상기 6번, 7번, 8번, 9번 해주에 저장된 소금물을 15~20mm 두께로 엷게 펴서 결정지로 이송하는 단계(S4)； 상기 결정지에 이송된 소금물을 오전7시부터 오후4시까지 9시간 동안 하루의 태양열과 바람에 의해서 결정되는 뜬 천일염과 가라앉은 천일염을 채염하는 단계(S5)； 상기 뜬 천일염은 뜰채로 채염하고, 가라앉은 천일염은 염도28도에서 채염하여 소금 간수창고에 각각 저장 보관하는 단계(S6)로 이루어진다.
