A vacuum deaerator for fruit-vegetable of the present invention comprises: a first vacuum tank (10) installed with a vacuum gauge and a water level sensor； a second vacuum tank (20) installed with the vacuum gauge and the water level sensor； a vacuum pump (30) decompressing the inside of the first and second vacuum tanks (10, 20)； a plurality of electric valves (1, 2, 3, 4, 5, 6) and a plurality of pipes (11, 12, 13, 14, 15, 16, 17) interconnecting the first vacuum tank (10), the second vacuum tank (20), and the vacuum pump (30)； a gas supply means (60) for pressing the second vacuum tank (20)； and a control portion for controlling the electric valves and the vacuum pump (30).
