PURPOSE: A manufacturing method of ginseng extract is provided to effectively extract ginseng with high contents of ginsenoside, amino acid, argininefructorglucose(AFG), and etc of the active ingredient from ginseng. CONSTITUTION: A manufacturing method of ginseng extract comprises the step of extracting by adding ginseng to extraction solvent; the step of low temperature filtering by freezing obtained extract; the step of low temperature concentrate with obtained filtrate; and the step of low temperature ripening of obtained concentrate. The ginseng may be the dried ginseng or the ginseng powder. The extraction solvent comprises water, low-quality glycol of 1-6 carbon, low-quality alcohol of 1-4 carbon, and mixed solvent consisting one selected group of above. 10-1000mL of extract solvent is used according to 1g of ginseng to perform extraction. The extraction is done at 50-90 deg C for 1-12 hours. The low temperature filtering is performed by cooling at 1-30 deg C and done according to the temperature systematically. The low temperature filtering is performed more than 4 times based on the temperature. The low temperature filtering is performed by using centrifuge. The low temperature concentration is performed at 50-70 deg C for 1-24 hours. The low temperature ripening is performed at 10-40 deg C for 10-20 days.
