PROBLEM TO BE SOLVED: To provide a method of improving the quality of grain powder food such as bread or confectionery by imparting a good texture, touch and appearance to the food.SOLUTION: To improve the quality of grain powder food such as bread or confectionery, collagen and a heated saccharide product obtained by heat treating fructose or a saccharide composition containing fructose at 100 to 200 °C are added and blended into the raw materials of the grain powder food. Further, natural polysaccharides are preferably added and blended.
