The present invention addresses the problem of providing a method of producing seamless soft capsules that have an enteric coating and exhibit superior production characteristics. In this method, enteric-coated seamless soft capsules are produced by means of steps (a) and (b), which are: (a) a step for preparing an enteric capsule coating solution which has a viscosity of 60-127 mPa·s at 50°C and contains gelatin and a low methoxyl pectin having a degree of esterification of 0-40% and a degree of amidation of 0-25%; and (b) a step for encapsulating capsule contents by means of a falling-drop technique using the prepared enteric capsule coating solution. It is preferable for the gelatin to have a jelly strength of 180-330 Bloom, for the viscosity of a 2 mass percent solution of the low methoxyl pectin to be 8-15 mPa·s at a temperature of 35°C, and for the enteric capsule coating solution to contain 10-20 parts by mass of the low methoxyl pectin per 100 parts by mass of the gelatin.
