The apparatus and method relates to a cutting apparatus comprising: a cutter to cut root vegetables seated on a roller portion on which root vegetables are seated where the roller portion includes a front roller and a rear roller spaced from each other； where the front roller is located on a lower portion of the front cutter to cut one side of the root vegetables； where the rear roller is located on a lower portion of the rear cutter to cut the other side of the root vegetables； where the front roller causes the pair of rollers to rotate in opposite directions to move the root vegetables in a forward direction of the cutter； and where the rear rollers cause the pair of rollers to rotate in opposite directions to move the root vegetables in a backward direction of the cutter.인력을 사용하지 않고 빠른 시간 내에 충분한 양의 근채류를 정확하게 연속적으로 절단하는 장치 및 절단방법을 제시한다. 그 장치 및 방법은 근채류가 안착되는 롤러부에 안착된 근채류를 절단하기 위한 커터부를 포함하는 절단장치에 관한 것으로, 롤러부는 서로 이격되어 배치된 전방 롤러 및 후방 롤러를 포함하고, 전방 롤러는 근채류의 일측을 절단하기 위한 전방 커터의 하부에 위치하고, 후방 롤러는 근채류의 타측을 절단하기 위한 후방 커터의 하부에 위치하며, 전방 롤러는 한 쌍의 롤러가 서로 반대방향으로 회전하여 근채류를 전방 커터 방향으로 이동하게 하고, 후방 롤러는 한 쌍의 롤러가 서로 반대방향으로 회전하여 근채류를 후방 커터 방향으로 이동하게 한다.
