The invention relates to a method for operating a pasteurization plant, in which closed containers filled with foodstuffs are treated in one or more treatment zones with a temperature-controlled aqueous treatment fluid. At least part of the treatment fluid is conveyed, for reuse, in at least one circulation circuit around the treatment zones. A part quantity of the treatment fluid conveyed in the at least one circulation circuit is extracted and is supplied to a purification device comprising a membrane filtration device. Here, the throughflow rate through the membrane filtration device is continuously monitored using a sensor device. A volumetric flow through the membrane filtration device is influenced by adjusting a throughflow control setting of at least one adjustable throughflow regulating means. Then, the at least one part flow is fed back into a circulation circuit or a treatment zone.
